How to actually price a recipe

Knowing what a dish costs to make is the difference between guessing at a menu price and setting one with confidence. The math is simple in principle — divide the cost of every ingredient you used by the number of servings — but it gets fiddly fast, because you rarely use a whole package of anything. You buy a five-pound bag of flour and use 300 grams of it; you buy a dozen eggs and use three.

This calculator handles that proportion for you. What is a waste allowance and why does it matter?

A waste allowance is a percentage buffer added to your ingredient costs to account for trim, peelings, spoilage, and spills. Most kitchens use somewhere between 5% and 15%, depending on how much prep loss a recipe involves.

Can I mix weights and volumes?

You can use any unit for an ingredient, but the amount you used and the package size for that same ingredient must be the same type — both by weight or both by volume. The calculator flags a mismatch if you try to compare a weight against a volume.
